KASA - Lil' Kristi's Spicy Tortilla Chip Breaded Chicken
2 Chicken Breasts
Extra Virgin Olive oil for Cooking
Lil' Kristi's tortilla chips
1 cup of Lil' Kristi's hot or mild salsa
Choose teriyaki sauce, Pomegranate or Italian Dressing to marinate chicken breasts
Pre-heat oven to 350 degrees.
Marinate Chicken breasts, at least 30 minutes, and up to 24 hours.
Put olive oil in glass cooking dish to prevent sticking
Cook for about 20 minutes, until about 2/3 done.
Lightly coat chicken breasts with olive oil.
Smash Lil' Kristi's tortilla chips until desired coating consistency, then coat chicken, pack them densely to form breading around the chicken breasts.
Bake for about 15 minutes more, until done.
Use Lil' Kristi's salsa to smother the chicken.
You may also use cheese, sour cream or green chile.
Serve with Lil' Kristi's warm flour tortillas!
