ALBUQUERQUE (KASA) - Chef Jan shows us how to cook a New Mexican style barbecue chicken tortilla pizza and the kids will love it.
BBQ Chicken Tortilla Pizza
- 1 lb boneless chicken breast uncooked or shredded cooked chicken
- 2 Tbsp. oil
- 1/3 cup purchased barbecue sauce
- 1 Tbsp. balsamic vinegar
- juice of ½ lime
- 4 burrito-size tortillas (10 inch)
- 1 ½ c mozzarella shredded
- 1 cup diced Roma tomatoes
- ½ cup thinly sliced red onion
- Diced jalapeno chile to taste or substitute chopped green chile about six chilles
- Chopped cilantro leaves
Preheat broiler with oven rack 3-4 inches from the heating element and coat the back of a baking sheet with nonstick spray.
Saute chicken in oil in a large sauté pan over medium high heat until cooked through, 7-8 minutes for uncooked chicken. Cooked chicken just warm up and stir in barbecue sauce, vinegar, and lime juice. Cook until thickened, 2 minutes and remove from heat.
Brown tortillas one at a time over high heat in a nonstick skillet that has been coated with nonstick spray. Cook on both sides until crisp. Transfer 2 tortillas to the prepared baking sheet. Top each with ¼ of the mozzarella chicken, tomato, onion, and jalapeno. Broil pizzas 2-3 minutes, watching closely so they don’t burn. Remove from oven and transfer pizzas to a cutting board.
Garnish with cilantro. Prepare remaining tortillas the same way.
