Amanda’s Favorite Crockpot Green Chile Stew
Ingredients:
2-3 pounds Cubed Pork or Chicken or Steak
1 16oz Jar of Sadie’s Roasted Green Chile Salsa
16oz of Water
2 14.5oz Cans of Diced Tomatoes
4 Cups Medium Chopped Cauliflower (potatoes for Not so Low Carb)
1 Tsp. Minced Garlic
1 Tsp. Black Pepper
Salt to Taste
1 Tbs. Olive Oil
8oz of Shredded Cheddar Cheese (approximately 2 cups)
6-8oz of Sour Cream
Preparation:
Brown Meat or Chicken in olive oil, drain excess grease.
Add Meat or Chicken to Crockpot.
Add 16oz Jar of Sadie’s Roasted Green Chile Salsa.
Add 16oz Jar of Water.
Add 2 16oz Jars of Diced Tomatoes.
Add Garlic, Salt and Pepper.
Add Cauliflower for the last 2 hours of cooking
Settings:
Set Crockpot on high 8-Hour Setting. After 6 hours add Cauliflower and turn down Crockpot setting for the remaining 2 hours.
Garnish:
Shredded Cheese to Taste
Sour Cream to Taste
Yield:
6-8 Servings
