KASA - Seared Ahi Tuna with Roasted Pear Relish
1 lb fresh ahi tuna, cut into 1 - 1/2 inch
2 green onion, sliced thinly
2 garlic cloves, minced
1 cup soy sauce
1/4 cup sesame seed oil
Salt TT
Pepper TT
Olive Oil TT
In a sauce pan, place onion, garlic, soy sauce, sesame oil and ginger and bring to a light boil. Cool down to 41*F. Place tuna strips in marinate and let it set for 20 to 30 minutes. In a large cast iron pan, heat pan as high as possible, place a small amount of olive oil in pan until it smokes. Take tuna out of marinate, and place on a rack. Season with salt and pepper, and place on hot pan. Turn tuna on different sides every 5 to 10 seconds until all sides have been browned.
Relish
1/2 cup jicama, small diced
1/2 cup roasted pear, small diced
1 green onion, thinly sliced
1/4 cup cucumber, deseeded, peeled and small diced
1 red pepper, small diced
Olive oil TT
Salt TT
Pepper TT
Mix all ingredients together, serve
